- Simple Vanilla Berry Layer Cake Recipe
This recipe is the kickoff to PURE Allergy Life’s allergy friendly 4th of July celebration! We will be sharing our favorite and latest recipes throughout the week and sharing our PURE Picks for a festive weekend BBQ with family. Contains: Wheat Recipe adapted from Spaceships and Laser Beams Bakery Blog. Makes 2 8-inch cake rounds. Ingredients: 3 cups all-purpose flour or gluten free flour of your choice 2 cups granulated sugar 2 tsp. baking soda 2 tsp. white vinegar ½ cup plus 2 tbsp. Canola oil 2 cups water 3 tsp. vanilla extract 1 teaspoon lemon zest (optional) Fresh strawberries, raspberries, blueberries, and mint (for topping) Your favorite dairy free vanilla frosting or cream cheese frosting recipe (PURE Pantry Pick for a quick store bought option: Duncan Hines Creamy Vanilla Frosting) Prep: ∙ Preheat the oven to 350 degrees. ∙ Line the round cake pans with parchment paper rounds. ∙ To do this, fold the parchment paper around the same centerfold. Cut the parchment slightly smaller than the radius of the pan. Unfold, and it fits perfectly! ∙ Combine the wet ingredients and sugar in a mixing bowl, whisk together. ∙ Sift the flour and baking soda over the wet mixture, whisk to combine. ∙ Add the lemon zest if you would like. ∙ Pour the batter into the parchment lined pans, evenly distributed. ∙ Bake in the oven for 30-40 minutes or until a toothpick comes out clean. ∙ Cool fully on a cooling rack before removing from pans and frosting. ∙ Layer frosting and berries between the cake layers, then top with more frosting, berries, and mint. ∙ For storage, chill the cake covered with plastic wrap to minimize moisture.

Eating in the mountains with style. PURE Allergy Life took a road trip to Vermont and New Hampshire recently and we have two incredible allergy friendly PURE dining destinations to check out! During our three day road trip, we did not want to eat out every meal because it can be stressful navigating the menus at multiple restaurants. Our advice is to select a few really special places to eat for dinner and make your own food for breakfasts and lunches. We packed our trusty Koolatron plug in cooler in the back of our car and stocked it with favorite simple trip foods. For breakfast, we made our Vegan Kuchen Coffee Cake and banana bread, along with orange juice and fresh fruit. For lunch, we packed veggie wraps, using our Bean Dip and tomates, arugula, red onion, avocado, and Violife Smoked Provolone. Wrap all of the ingredients in a wrap of your choice, which can be GF if needed. We also had our favorite Grab and Go Snacks and lots of Cape Cod Chips, which are naturally GF! Here are our top PURE Dining Destinations for Vermont/New Hampshire: The Chop House At The Equinox Resort and Spa Manchester, VT Inside and outside dining at this stunning restaurants located at the historic Equniox Resort. We followed our dining out protocols and we called in advance to book the reservation and spoke to a Manager about the menu. We selected our entrees in advance with the Chef so everyone was on the same page about our allergies. It is easiest to pick a protein, starch, and vegetable and have everything cooked separately with olive oil in clean pans. Upon our arrival, the Chef came to our table and went over our order in detail. He also brought out our food and confirmed how everything was prepared. It was very reassuring and the food was amazing! Stickney’s Restaurant At the Omni Mount Washington Resort Bretton Woods, NH This is a stunning hotel destination that has many restaurants available to guests. We experienced dining at Stickney’s. The views of Mount Washington and the White Mountains are spectacular as you dine! We called in advance and the Head Chef personally called us back to go over our allergies to dairy, eggs, peanuts, tree nuts, and quinoa. He was very knowledgeable about allergies and he said they have many allergy needs each day. We selected the entrees with the Chef so he was prepared in advance for our meal. Upon arrival at Stickney's we asked for a Manager to follow the whole meal through with the server. This is always the best way to make sure the whole staff is attention to detail with the ordering process. We picked a protein, starch, and vegetable and everything was cooked separately with olive oil in clean pans. It was a delicious and safe experience! The key to a streamlined pantry is to keep it clean and organized! Clear canisters look simple and pure for some staples, but an allergy free pantry is best in the original packaging so you can always double check the ingredients again if needed. Keep your pantry organized with bins for Allergy Friendly Grab and Go Snacks. Having these simple ingredients on hand in your pantry makes it easy for trying new recipes at home. Allergy Friendly Pantry Staples: Flour - All-Purpose or Gluten Free Sugar - Simple and pure. Vegetable Shortening- A great choice for baking instead of butter. Molasses - Great for cookies! Brown Sugar - Our favorite is dark brown sugar for it has more depth and flavor. Baking Soda - Go-to leavening product. Buy an extra one to pop in your refrigerator to absorb the food odors. Leave the box open or transfer the contents of one box into a Ball jar so it looks more attractive. Baking Powder - Go-to leavening product. Vanilla - Must be PURE vanilla extract! Oats - Our go-to brand is Quaker Oats, but if you have a Gluten Allergy you should try a special GF variety. Cornmeal - Great for pizza crusts and cornbread! Spices - PURE Pick - Our go-to brand is McCormick! Extra Virgin Olive Oil - This is used multiple times a day for all of our cooking. PURE Pantry Pick: California Olive Ranch. Canola Oil - This is an easy, safe substitute for melted butter in baking recipes and great for sautéing if you do not have Olive Oil. We use Crisco brand. Honey - Delicious on a piece of toast, or added to sweeten tea or your homemade salad dressing. Dozens of uses. Enjoy Life Chocolate Chips - A must for cookies, ice cream topper, and even waffles or pancakes. White Vinegar - This pure ingredient is amazing. It is used for baking allergy friendly baked goods and dressings. It also doubles as a pure cleaning agent for your house. You can dilute it with 1/2 water, 1/2 vinegar and clean surfaces and glass or use it straight for stubborn grime and lime deposits from hard water residue. Apple Cider Vinegar - Go-to for salad dressings, recipes, and overall health benefits. White Wine Vinegar - Perfect for homemade salad dressings. Rice Milk, Soy Milk, or Oat milk - Pick your favorite dairy free milk and use it anytime a recipe calls for milk. Mix it with Hershey's chocolate sauce for chocolate milk or hot cocoa. Who needs dairy when there are amazing dairy free healthier options. Peppermint Tea - PURE’s go-to hot drink. Peppermint calms the gut and is soothing. It is naturally caffeine free so drink as much as you want because it will keep you hydrated too. Stash is our favorite. Coffee - Always good to have for the coffee lovers. Add dairy free creamers like Silk or Ripple. Applesauce - Easy, safe substitute for eggs in baking recipes. We love Mott's White Rice - Always safe and easy to pair with veggies and a protein for a quick meal. Instant Yeast - A must-have ingredient for fresh bread, pizza dough, or any other baked treat. Dried Pasta (PURE Pantry Pick: Barilla; GF option) Everyone loves pasta and it’s easy to make and safe at home! Ketchup - Go for Simply Heinz for a healthier choice without corn syrup. Mustard - Love classic yellow mustard on our Applegate Farms Hotdogs along with Ketchup; also Grey Poupon is delicious and always needed for homemade salad dressings. Try it with your roasted potatoes for an alternative to ketchup! Maple Syrup - Necessary for pancakes, baking, or salad dressings! Non-Stick Foil - Must have for grilling and sheet pan cooking. Serves 1 Ingredients: ½ cup cranberry juice (PURE Pantry Pick: Ocean Spray Cranberry Cocktail) Juice of ½ lime Lime Rasps 2 tbsp. Orange juice 1 can of Ginger Ale or sparkling water 1 cup crushed ice Prep: ∙ Add cranberry juice, orange juice, and lime juice to a shaker with ½ of the crushed ice. ∙ Shake to combine. ∙ Pour the mix into a glass over the other ½ of crushed ice ∙ Top with a splash of ginger ale and lime rasps. © 2023 PURE Allergy Life LLC

Summer is here and it’s time for easy, delicious allergy friendly food. We take advantage of fresh seafood every night and prepare it safely at home so it’s stress free and easy! We love Cod Sandwiches! They are incredible with our very own vegan tartar sauce recipe. Contains: Wheat and Fish Serves 4 Ingredients: 1 -1.25 lbs fresh cod cut into 4 sandwich size portions (Select the freshest cod available) 1 cup Panko bread crumbs 1 tbsp. extra virgin olive oil 1 tsp. dried parsley 1 lemon cut into wedges Prep: ・Preheat the oven to 400 degrees. ・Mix olive oil and Panko together in a small saucepan and cook over low heat until golden brown. ・Add the dried parsley and take off heat. Set aside. ・Arrange the cod filets on a sheet pan lined with foil. Top with the breadcrumbs. ・Bake for 15 minutes or until the fish is white and flaky. ・During the last few minutes, place the sandwich buns open faced on another sheet pan to lightly toasted them. To Serve: ・Build your cod sandwich with the baked cod, arugula, tartar sauce, and a squeeze of fresh lemon. ・Arugula ・Vegan Tartar Sauce ・Serve with PURE Fresh charred asparagus (or any fresh vegetable), roasted potatoes/baked potato, and sweet corn with herbed butter. © 2023 PURE Allergy Life LLC

Here are some incredible PURE Pick Market Destinations on Lower Cape Cod. We believe that sourcing local, fresh foods and cooking at home is the best way to have delicious, healthy and safe meals. These destinations have the best foods and you will want to keep going back for more each week! Chatham Village Market This is the local grocery store in Chatham which has it all! It is easy to do a quick shopping to pick up your groceries for the week. They carry some familiar allergy friendly brands in addition to all of your other shopping needs. The seafood and meat departments are incredible! The local seafood is the best, they are constantly getting new orders, keeping it so fresh. They will even do special orders, making sure they use strict allergy protocol for handling the foods. Having such friendly staff also makes the difference! Chatham Pier Fish Market This is a classic working fish market right next to the Chatham Fish Pier where fishing boats come to unload their catch. First, head up to the Fish Pier’s upper deck to take in the scenic harbor view and watch the fishing boats come in. Next, stop by Chatham Fish Pier Market, and see the amazing catch of the day ready for you to purchase and cook at home. We are always so appreciative of the staff’s willingness to change their gloves when starting an order for us so that we are extra safe with food allergies. They keep the fresh fish separate from the to-go food that is also available there. Chatham Bars Inn Farm Stand The best kept secret on the lower Cape is Chatham Bars Inn’s very own farm in Brewster! All of the in season produce is grown there for CBI and their farm stand is open to the public! During our last trip there, we loaded up on incredible zucchini, summer squash, baby bok choy, kale, strawberries, tomatoes, lettuce, radishes, and green onions. Each time we go there we are delighted by the fresh produce. Then we cook PURE Fresh meals for the next several days. Healthy, easy, delicious and safe! If you near Brewster, stop in and shop locally for your veggies! Orleans Whole Foods Store, Natural and Organic Foods This quaint market carries tons of specialty products, including many allergy friendly brands of dairy free cheese, butter, and ice cream. It is a great spot to pick up fresh produce as well! We love stopping here instead of having to go to larger chain grocery stores. Mac's Chatham Fish and Lobster We love picking up fresh seafood from the Mac’s fish market. The locally caught fish from the Cape is always the best. Cooking fresh food at home is our preferred choice, but it is always fun to experience dining out on the Cape by using this select list of our favorite restaurants. Take time to talk through your allergies with the restaurants when you make your reservation, and ask for a manager when you arrive to make sure the meal is done safely. Always remember to compliment the dining team if you had a great experience. All the places listed below have gone above and beyond to accommodate our allergies and make the meal memorable. Impudent Oyster This Portuguese inspired restaurant serves fresh catch seafood right from the Cape! The staff here are very understanding and attention to detail with food allergies. This has been one of our favorite family spots for years. Some of our PURE Pick Menu Items include: Gambas Al Ajillo (garlic oil shrimp) and sole with potatoes. Everything was delicious and I was so impressed with the reassurance and attention to detail within the restaurant. The Squire This is the quintessential Cape Cod restaurant! It is family friendly on one side and a very old school bar on the other side. They serve fresh seafood, prepared in a traditional way. The staff is very used to dealing with food allergies, and they are very accommodating and easy to work with to make the meal safe. Our favorite is baked cod with a baked potato and vegetable - simple and delicious! You haven’t had the true Cape experience without visiting the Squire! Bluefins Sushi & Sake Bar This is one of our favorite Cape restaurants because of the attention to detail with making sure everything is allergy safe. All of the dishes use fresh cape ingredients and the sushi chefs themselves help to catch the fresh fish. The items on the menu can be accommodated based on allergies and the chefs are always very careful when prepping the food. Everything can be made in a dedicated prep area to avoid cross contamination too. Not only are they attention to detail with seated dining, but takeout orders are marked with allergies and are made sure to be kept separate from other food preparation. There is a second Bluefins location in Falmouth as well! Twenty-Eight Atlantic This waterfront restaurant is a must-visit spot for fancy dinner or drinks. The head chefs and servers are extremely cautious with food allergies and very helpful with planning out a dining experience in advance. The restaurant’s menu is tailored to being super flexible and accommodating with dish modifications based on food allergies. The bakery chef can provide additional information about the preparation of the daily bread choice. Twenty-Eight Atlantic is a part of the Wequassett Resort which is one of the nicest spots to stay on the Cape. The resort overlooks Pleasant Bay and is a historic gem. Beach House Grill, Chatham Bars Inn This is a stunning restaurant located right at the private beach at Chatham Bars Inn. CBI is a five star resort with a high level of service, so when you book a dining reservation at the Beach House Grill, or any of the other restaurants at CBI, they ask about food allergies and make note of your dietary preferences in your reservation notes. We always take it a step further and discuss the menu in advance with a manager on the phone and upon arrival. At CBI there are families that stay for several days and they work directly with the chef to make sure all of the food is done safely according to their allergies. Additionally, they source their produce from their very own farm located in Brewster. Viera on Main Surprisingly there are not very many places in Chatham with outdoor seating, but Viera has a lovely patio with many tables to enjoy the Cape air. They are known for their fresh local seafood and farm-grown vegetables. It is always important to call in to let them know about your allergies so you can keep the meal simple. Chatham Cookware This is a great place to pick up a quick snack, drink, or meal! They serve a variety of prepared foods as well as packaged chips and drink options.
